Just like holidays, events like vacations and camping trips can make managing type 1 diabetes just a little trickier. As with anything diabetes-related, I find that planning ahead is often the key to success — and for camping, part of that is having a few great carb-counted camp-cooking recipes in my arsenal.
Whether you’re heading out on a backcountry trip or just setting up a tent in the backyard, you’ve got to try at least one of the fun new campfire recipes I’m sharing today! But why not all three? Appetizer, dinner, and dessert — done!
Bacon makes everything taste better — even popcorn! This campfire bacon popcorn is the epitome of easy, but the kids will go absolutely crazy for it.
Hobo dinners are a fun take on burgers that are just as low-carb and easy to put together, but a little more of a complete meal than just meat on a bun. Cooking in individual foil packets makes it easier to calculate carbs, not to mention a breeze to clean up.
This campfire dessert is so easy to make and absolutely delicious! Heated over an open fire, the fresh berries cook down into the “jelly” part of the PB&J. The finished product is a tasty twist on the typical camping treat — and the addition of fresh berries and peanut butter makes it just a bit healthier too.
