Since my son was diagnosed with type 1 diabetes, our family still enjoys the occasional outing to a donut shop to enjoy our favorite fried dough confection. But when we do, there is no denying that it typically results in erratic blood sugar. So we needed a healthier version to enjoy more often… Enter: yogurt-iced apple donuts.
One could argue that there are still carbs and sugar in apples and yogurt. But apple donuts have half the carbs of a normal donut, and I personally feel a lot better giving my kids whole fruit and protein-rich dairy (with mostly natural sugars) rather than a ton of added sugar and white flour. There’s no contest as to which will be friendlier to blood sugar, which is my ultimate goal.
Of course, when you’re making a swap for a well-loved treat, your alternative needs to live up to the original. Thankfully, with their bright colors and burst of delicious flavor, these apple donuts do just that.
- 2 medium apples, cored and sliced crosswise into 4 discs each
- ½ cup vanilla Greek yogurt
- ½ cup granola
- 2 teaspoons ground flax seed
- ½ cup sliced strawberries (or fruit of choice)
How To Make It
- Lay apple slices on a flat surface.
- Spread 1 tablespoon Greek yogurt, 1 tablespoon granola, ¼ teaspoon ground flax seed, and 1 tablespoon fruit onto each apple slice.
