Hamburgers tend to be a camping staple, but if you camp pretty often, they can get monotonous. Hobo dinners are a fun take on burgers that are just as low-carb and easy to put together, but a little more of a complete meal than just meat on a bun. Cooking in individual foil packets makes it easier to calculate carbs, not to mention a breeze to clean up. Plus, each kid on your camping trip can customize their packet according to their tastes — more meat for one kid, more veggies for another (if you’re that lucky!).
- olive oil
- 4 lean hamburger patties
- 1 medium onion, sliced into 12 thick slices
- 1 cup cubed potatoes
- 4 whole carrots, chopped into bite-sized pieces
- 2 tablespoons butter
- salt and pepper, garlic salt, or seasoning salt, to taste
How To Make It
- Spread out 8 squares of aluminum foil on a flat surface. Form the foil into 4 packets with 2 pieces of foil each.
- Drizzle the bottom of the foil with a little olive oil.
- Season hamburger patties with salt and pepper or seasonings of choice.
- Layer 1 hamburger patty, 3 onion slices, ¼ cup potatoes, 1 carrot, and ½ tablespoon butter into each foil pack.
- Seal up the edges of the foil to create a tight packet.
- Place the packets on a hot grill or over a campfire and let them cook for 30 to 40 minutes, or until the hamburger is cooked through and the vegetables are tender. Remove from heat and carefully open packets with oven mitts.
