This party platter is made up of virtually carbohydrate-free ingredients. What’s even better is that you can tweak it to your children’s likes and dislikes. Not into dairy? Add more rows of the vegetables they love best. Not big veggie eaters? Add more meats and cheeses. That said, you may be pleasantly surprised at how much more responsive kids can be when healthy foods are simply presented in a different way. Tomatoes on their own may not be as appealing, but when they crown a colorful Christmas tree, little ones may just gobble them up.
- 3 cups bite-sized vegetables (such as grape tomatoes, baby carrots, and/or chopped cauliflower, celery, bell peppers, and broccoli)
- 8 ounces cheese, cubed or sliced (such as pepper jack, Colby-jack, cheddar)
- 4 ounces meat of choice, sliced thin (such as salami, turkey)
- 6 to 8 rosemary sprigs (for garnish)
How To Make It
- Place a row or two of cauliflower at the bottom of a platter to simulate snow.
- Place a thick slice of celery above the cauliflower to make the tree trunk.
- Layer meat, cheese, and vegetables in rows above the celery, each row a bit narrower than the last, to form a triangular evergreen tree shape. Separate the rows with several sprigs of rosemary.
- Place some short pieces of cut rosemary at the top to complete the tree.
