  • 1 tablespoon olive oil
  • ½ cup diced onion
  • ½ cup shredded carrots
  • 1 tablespoon chopped garlic
  • 1 28-ounce can diced plum tomatoes, including their juices
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 2 tablespoons fresh basil, finely chopped (or 2 teaspoons dried)
  • Sea salt and black pepper

How To Make It

  1. Heat olive oil in medium saucepan over medium heat.
  2. Add onion, carrots and garlic. Cook for 2-3 minutes.
  3. Add tomatoes (with juice), red pepper flakes and thyme.
  4. Bring to a boil, then reduce heat to simmer for 20 minutes until sauce has thickened slightly.
  5. Add half of the basil and carefully blend sauce in blender or food processor in batches.
  6. Return to saucepan; season with salt and pepper and garnish with remaining basil. Serve immediately or freeze for up to 4 months.
