Green smoothies seems to be all the rage these days. And honestly, what’s not to love? You get to give your kids the treat of a fruit smoothie and sneak some veggies into them without them even knowing it. Once while I was making these smoothie packs, my son happened to see what I was putting in them. He couldn’t believe there was spinach in there! He couldn’t even taste it. Thankfully, he already loved the smoothie so much that even this new knowledge didn’t deter him from sucking it down.
This frosty treat really could be called a power smoothie, because it always gives us an energy boost. It’s no wonder, since it’s full of nutrient-dense ingredients like avocado and spinach paired with juicy pineapple and mango. I typically try to omit any added fruit juice in our smoothies whenever possible, but I’ve found that this particular recipe needs a little additional sweetness to mask the veggies. However, it’s still a fraction of the sugar found in most smoothies.
- 2 cups spinach
- 1 avocado, diced
- 1 cup frozen pineapple chunks
- 1 cup frozen mango chunks
- ½ cup ice cubes
- 1 cup water
- 1 cup apple juice
How To Make It
- Place first five ingredients in a plastic freezer bag. (Or, to make individual portions, divide these ingredients evenly between four freezer bags.) Label the bag and store in the freezer.
- When ready to serve, pour the contents of the bag into a blender. Add water and apple juice. Blend until smooth. (If using individual-portion bags, add only ¼ cup apple juice and ¼ cup water.)
