Unicorn Horn Cheesecake Dip

If you’re looking for a fun dessert for your kiddo with type 1 diabetes, you have to try this cheesecake dip with “unicorn horns” as dippers. (Turns out, their horns taste a lot like pretzels — who knew?)

While I don’t typically encourage playing with your food, this dip is particularly fun to dunk a pretzel into, swirl to coat, and see the colors mesh together. Each one comes out looking a little different. The dip alone is amazing and really does taste like cheesecake. The best part? A quarter cup has less than one gram of carbohydrate.

Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup heavy cream
  • 2½ tablespoons sugar substitute (like granulated sucralose)
  • 1 teaspoon lemon juice
  • 2 teaspoons vanilla
  • Food coloring (I used pastel colors for a “unicorn” look)
  • Braided pretzels, for dipping

How To Make It

  1. Using an electric mixer, mix together cream cheese, heavy cream, sugar substitute, lemon juice, and vanilla until mixture is thick.
  2. Evenly distribute mixture between four small bowls. Stir 2 to 3 drops of food coloring into each bowl, one color per bowl (I used pink, blue, green, and yellow).
  3. In a serving dish, add spoonfuls of the dip from each bowl, alternating colors. Once all the dip has been transferred to the dish, gently swirl the colors with a spoon, being careful not to fully combine them.
  4. Serve dip with braided pretzels. Store, covered, in the refrigerator.
