
If you’re looking for a fun dessert for your kiddo with type 1 diabetes, you have to try this cheesecake dip with “unicorn horns” as dippers. (Turns out, their horns taste a lot like pretzels — who knew?)
While I don’t typically encourage playing with your food, this dip is particularly fun to dunk a pretzel into, swirl to coat, and see the colors mesh together. Each one comes out looking a little different. The dip alone is amazing and really does taste like cheesecake. The best part? A quarter cup has less than one gram of carbohydrate.

Ingredients
- 8 ounces cream cheese, softened
- 1 cup heavy cream
- 2½ tablespoons sugar substitute (like granulated sucralose)
- 1 teaspoon lemon juice
- 2 teaspoons vanilla
- Food coloring (I used pastel colors for a “unicorn” look)
- Braided pretzels, for dipping
How To Make It
- Using an electric mixer, mix together cream cheese, heavy cream, sugar substitute, lemon juice, and vanilla until mixture is thick.
- Evenly distribute mixture between four small bowls. Stir 2 to 3 drops of food coloring into each bowl, one color per bowl (I used pink, blue, green, and yellow).
- In a serving dish, add spoonfuls of the dip from each bowl, alternating colors. Once all the dip has been transferred to the dish, gently swirl the colors with a spoon, being careful not to fully combine them.
- Serve dip with braided pretzels. Store, covered, in the refrigerator.
