It wasn’t until about a year ago that I discovered smoothie bowls, and since then I’ve had one (at minimum!) every week. Smoothie bowls are just what they sound like: everything you love about smoothies, except with a little thicker consistency, topped with fresh berries (or really any topping you wish), and eaten from a bowl with a spoon.
It didn’t take my kids long to take an interest in my newly discovered treat, and now they’re obsessed with it too. There never seems to be enough to go around! I keep frozen fruit and coconut milk on hand at all times so I can throw together a smoothie bowl on the fly.
Speaking of popular treats, you might remember a particular frozen unicorn drink that really went viral recently. It was fine as a treat, but it wasn’t very nutritious, and I just knew there had to be a healthier way to create it. This Unicorn Smoothie Bowl reminds me a lot of that popular drink but without all of the added sugar. You could even have it for breakfast to bring a little magic to the start of your day!
- 1 small banana, frozen
- ¼ cup vanilla nonfat Greek yogurt
- 1 cup coconut milk
- 1 teaspoon blue spirulina powder (natural food coloring)
- ½ cup frozen raspberries
- ½ cup frozen strawberries
- ½ cup fresh mixed berries (raspberries, blackberries, blueberries)
- French dragée pearls (optional, for garnish)
How To Make It
- Add banana, yogurt, ½ cup coconut milk, and blue spirulina to a blender and puree. Pour mixture into a small bowl and set aside.
- Rinse blender, then add raspberries, strawberries, and remaining ½ cup coconut milk to the blender and puree.
- Divide the mixtures evenly into two clean bowls by adding alternating spoonfuls of the blue and pink mixtures to each bowl. Once all of the smoothie has been transferred to the bowls, gently swirl the two colors together with a spoon, being careful not to fully combine them.
- Top each bowl with ¼ cup fresh berries (and a few pearl dragées as an extra magical garnish, if you want).
