“No more cheese, Mom!” This is what Kaitlyn proclaimed to me as I was packing her lunch the other day. Over the last several months, I have tried to slip cheese into her lunch, but it keeps coming home again uneaten. It’s official… cheese has officially worn out its welcome with Kaitlyn.

I look back to several years ago, just after Kaitlyn was first diagnosed with type 1 diabetes. It was just before Christmastime, and string cheese had become a treat she would eat a lot — sometimes several times a day. It was great to be able to give her something that she really liked that was carb-free in place of holiday treats and sweets. We were still getting the hang of all the checking and dosing, and we wanted to give her as few shots as possible, so string cheese was a life-saver! I even remember someone from our church bringing over a package of string cheese with a bow attached, along with a Christmas card. I was so touched, and Kaitlyn loved it!

Alas, her love of string cheese was not to last. Over the next several months, she decided she didn’t want any more! We moved to other varieties and versions of cheese. She liked the cheddar cheese sticks (orange cheese as she called it) and the kind with white and orange swirled together. Later, she moved past that too, and declared she only liked “square cheese.” Eventually, we could not find any kind of cheese she would eat.

My other kids are eating it less and less too, so it was with great sadness that I gave away a huge pack of string cheese to our friends the other day. Not only have I lost a great carb-free “go-to” food, but now I’ll have to focus on some other calcium sources for my non-milk-drinking Kaitlyn. Please, oh please, don’t get tired of yogurt!

I’m reminded of some of the other carb-free foods we’ve worn out over the last couple of years. Sugar-free gelatin was a novel treat that Kaitlyn loved, but she doesn’t enjoy it very much anymore. Eggs are no longer a favorite, and chicken strips are something I have to convince her to eat. I used to consider Kaitlyn a very non-picky eater, but as anyone would, she has gotten tired of many of these carb-free snacks that have been pushed on her for so long now. I’m finding that it’s a constant job for me to come up with new, creative ways to feed her low-carb or carb-free snacks.

Here are a few of the Kaitlyn-approved low-carb foods that she’s enjoying right now:

  1.  Peanuts… the in-shell kind. It takes a while for her to shell her peanuts and then eat them, so it’s a great snack and activity in one! She works on her peanuts while her blood sugar is coming back into range.
  2. No-Sugar-Added Fruit Cups. Kaitlyn likes these as much as ice cream, and they’re only 6 carb grams per serving!
  3. Popcorn. She loves it if it’s hot and fresh, especially if she gets to help make it with our hot-air popper. Super low-carb!
  4. Snow Cones. Recently my older daughter got a snow cone maker as a gift, and the girls love to make their own snow cones. We bought some sugar-free syrup that actually tastes pretty good.

I hope these stay on the list for at least a little while!
